Ultimate gluten free gluttony!
- 1 chicken breast
- 3 pieces of rind-less bacon
- 2 cups of gluten free rice and/or corn pasta
- 2 cups of low fat cream
- 1 bunch of fresh basil
- 8 sun dried tomatoes
- cracked black pepper
- olive oil
- Shaved parmesan cheese
Cut chicken into bite size pieces and bacon into strips. Fry lightly in a small amount of olive oil.
Add creme, pepper and tomatoes and let simmer (don’t let it boil) until thickened.
Serve with finely diced fresh basil and parmesan on top.
