Yummy spicy noodle salad.
- 1 thick, lean beef steak
- 1 red chili
- 1 inch cube of ginger
- 2 garlic cloves
- 3/4 cup of tamari (or other gluten free soy sauce)
- 1/2 cup of lime juice
- 1 teaspoon of corn flour
- rice vermicelli noodles (make sure they are gluten free)
- 1 small bunch of spring onions
- 1/2 bunch of coriander
- 1/2 bunch basil
Grill the beef until its is cooked the way you like it (eg. medium rare) and cut into thin strips.
Heat a little oil in a wok. Slice chili, garlic and ginger and fry in oil until lightly browned. Add soy sauce and lime juice and let simmer for a few minutes.
Mix corn flour with a tiny amount of water then add to wok. Let simmer until the sauce thickens (add more corn flour mix if needed.
Cook rice noodles according to the instructions on the packet.
Slice up spring onions, coriander and basil and add to the sauce.
Add beef and noodles to sauce, mix through and serve.
