Creamy Chicken and Bacon Pasta

Ultimate gluten free gluttony!

  • 1 chicken breast
  • 3 pieces of rind-less bacon
  • 2 cups of gluten free rice and/or corn pasta
  • 2 cups of low fat cream
  • 1 bunch of fresh basil
  • 8 sun dried tomatoes
  • cracked black pepper
  • olive oil
  • Shaved parmesan cheese

Cut chicken into bite size pieces and bacon into strips. Fry lightly in a small amount of olive oil.

Add creme, pepper and tomatoes and let simmer (don’t let it boil) until thickened.

Serve with finely diced fresh basil and parmesan on top.
