Most store bought jars of pesto usually contain hidden gluten. Try our easy to make version.
- 1 bunch of basil
- 150 grams of pine nuts, almonds or cashews
- 2 garlic cloves
- 3 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 1 inch piece of parmesan cheese
- cracked black pepper
Use a food processor to blend all ingredients until it forms a smooth paste. Add more olive oil and lemon juice if the consistency is not right.
This pesto is good on gluten free cracker, mixed through pasta, across baked chicken breast or drizzled on steamed vegetables.
