Ginger Nut Cookies

This great recipe can be done with almonds or macadamia nuts. Very tasty and of course, gluten free!

  • 1 cup of nuts
  • 1 cup of caster sugar
  • 1 egg
  • 125 grams of preserved ginger

Dice the ginger.

Combine all other ingredients and blend in a food processor until the smooth.

Mix diced ginger into nut mix.

Dollop cookie sized amounts onto a greased baking tray and bake on 180 C for about 15 minutes or until slightly brown.

Allow to cool and serve.
