This is a really tasty, filling salad with nice strong flavors.
- 1/4 pumpkin or 1 large sweet potato
- 1 red capsicum/pepper
- 1 pk feta cheese
- 1 pk of rocket salad
- 100 grams of pine nuts
- 1 avocado
- 1 pk cherry tomatoes
- lemon juice
- olive oil
- cracked pepper
Pre heat the oven to 200C
Peel pumpkin and remove seeds. cut into bite size pieces and line up on baking tray. drizzle in olive oil and bake for 40 mins or until soft and brown.
Place red capsicum/pepper into oven for last 20 minutes of cooking time. Then peel, remove seeds and cut into strips.
Allow pumpkin and capsicum to cool.
Meanwhile spray a frying pan lightly with oil and toast pine nuts until slightly brown.
Cut feta and avocado into bite size pieces and combine with all other ingredients.
Season with pepper and lightly drizzle with lemon juice and olive oil before serving.
