Orange and Almond Cake

Yummy Gluten Free / Dairy Free Cake

  • 3 Oranges
  • 3 Large eggs
  • 1 3/4 cup of caster sugar
  • 3 cups of almond meal

1 teaspoon of gluten free baking powder

Pre heat the oven to 170C

Grease your cake tin and line with grease proof paper.

Place the oranges in a saucepan and cover wit cold water, bring to the boil and allow to simmer for 25 minutes.

Wash oranges under cold water. Chop 2 of the oranges coarsely and remove any seeds, set aside the 3rd orange for use in the syrup.

Using a food processor, blend the 2 oranges until smooth.

Using electric mixer, beat eggs and one cup of the caster sugar together until thick and light in colour. Set aside remaining sugar for use in the syrup.

Gently fold into the egg mixture, the almond meal, the blended oranges and the baking powder. Poor into your prepared try and bake for 1 hour.

Syrup:

remove the rind and juice from the remaining orange.

place the rind in a saucepan of boiling water and boil for 5 minutes.

Remove the water from the saucepan and place orange juice and remaining sugar in the saucepan wth the rind. Stir constantly until the sugr is dissolved and the syrup begins to thicken.

Serve cake with syrup
