Super yummy and easy to make.
- 125 grams of butter
- 1 cup of golden syrup (make sure its gluten free)
- 1 egg
- 4 cups of gluten free self raising flour (I use white wings)
- 2 teaspoons of xanthan gum
- 1 teaspoon of bicarb soda
- 2 teaspoons of ground ginger
- 1/2 cup of sugar
Pre heat the oven to 180 C
Microwave golden syrup for around 90 seconds and mix with butter until well combined.
Combine 3 1/2 cups of the flour ( keep 1/2 cup spare )and all other dry ingredients.
Once syrup has cooled, mix in egg and dry ingredients to form a smooth dough. If the dough is too sticky add some of the spare flour.
sprinkle some of the spare flour onto your kitchen surface and roll out your dough as thick as you like your cookies.
Line your tray with baking paper. Cut your cookie shapes (I personally go for ginger bread men) and line them up on the tray.
Bake in the oven on 180C for 15-20 minutes (longer if you made thick cookies)
If you want to ice the cookies, combine lemon juice, icing sugar (make sure it is gluten free), and a tiny bit of gluten free flour until you get the right consistency. Wait for the cookies to cool and decorate as desired.
