Herb Chicken with roast tomatoes and asparagus

A really yummy roast chicken dish.

If you want to feed more people or have a more filling dish simply add some potatoes in when baking the chicken, they will absorb the flavor and become delicious!

  • 1 whole chicken
  • 2 tablespoons of olive oil
  • Cherry truss vine tomatoes
  • 1 bunch of asparagus
  • 1 teaspoon of salt
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of hot paprika

Pre heat the oven to 220 C

Mix the herbs, paprika salt and olive oil together in a small bowl.

Make small incisions into the breasts and thighs of the chicken and rub the herb mix into the ckicken.

Place chicken in baking tray and cook for 30 – 40 minutes until golden brown. Add tomatoes onto tray for final 1o minutes of cooking time.

steam the asparagus.

Carve and serve.
