Gluten Free Vegetarian Lasanga

Gluten free, Vegetarian and delicious!

Serves 4

  • Gluten free lasagna sheet (available in the health food section in the supermarket)
  • 2 pks frozen spinach
  • 1 pk feta cheese
  • cheddar cheese
  • 1 sweet potato
  • 1 large onion
  • 1 large can of peeled tomatoes
  • 1-2 teaspoons of minced garlic
  • cracked black pepper
  • 1/2 teaspoon of hot paprika
  • fresh basil

Defrost frozen spinach, dice feta and combine.

peel and chop sweet potato into bite size pieces. Boil for 10 minutes or until soft (but still firm) and add to the spinach/feta mix.

Dice onion and fry with a little oil until browned. Add garlic, pepper and paprika.

Using a blender, process the can of tomatoes until smooth then add to frying pan and let simmer for 5 minutes.

In a deep oven dish, layer some of the tomato sauce, then a lasagna sheet, then some spinach mix followed by another lasagna sheet. repeat this process until the mixtures are finished. Top with the cheddar cheese.
Cover in aluminum foil and bake on 200C for 40 minutes. Uncover and bake for a further 10 minutes.

Serve with the fresh basil diced on top.
