Delicious Gluten Free Chocolate Cake
- 100 grams of butter
- 150 grams of dark chocolate
- 1/2 teaspoon of vanilla extract
- 4 large eggs
- 3/4 cup caster sugar
- 200 grams of almond meal
Pre heat oven to 180 C
Grease pan and line with baking paper
Place butter, chocolate, vanilla in saucepan on low heat stirring occasionally. Remove from heat when melted and smooth.
Separate the egg whites from the yolks.
Using an electric mixer, beat the egg whites with half the sugar until peaks form.
Then beat the egg yolks with remaining sugar until light and creamy.
Mix the cooled chocolate mixture first with the egg yolks, then with the almond meal.
Gently fold the egg whites into the chocolate mixture, adding one third of the egg whites at a time.
Poor mixture into the prepared pan and bake for 40 minutes.
Allow to cool and cover to keep moist.
Excellent with fresh cream and berries.
