Fresh tasting and easy to make.
- 2 chicken breasts
- 1 zucchini
- 1 capsicum
- 1 red onion
- 1 bunch fresh basil
- 1 teaspoon of salt
- 2 tablespoons of olive oil
- 1 lemon
Cut chicken, zucchini, red onion and capsicum into bite size pieces.
obtain zest and juice from the lemon.
Use a food processor to blend basil, salt, olive oil, lemon zest and juice until it forms a smooth paste.
To make up the skewers alternate pieces of chicken, capsicum, onion and zucchini until all used.
Skewers can be cooked on the BBQ or on a grill.
Cook in the desired method, brush with basil mix every few minutes to keep moist.
Serve atop salad, rice or fries.
